In his new cookbook, “From Crook to Cook”, Snoop shares his favorite recipes, including this one for Cognac Mashed Potatoes. So, if you’re looking for a new and exciting twist on a Thanksgiving classic, be sure to try Snoop’s recipe.

Ingredients:

  • 4 pounds russet potatoes, peeled and chopped
  • ½ cup (4 oz.) cognac or other brandy
  • 4 tablespoons unsalted butter
  • 2 cups heavy cream
  • ½ cup mayonnaise
  • 2½ teaspoons kosher salt
  • 1 teaspoon cracked black pepper

Instructions:

  1. Bring a large pot of heavily salted water to a boil over high heat. Reduce heat to medium-high and add potatoes. Cook, stirring occasionally, until tender, about 25 minutes.
  2. Drain potatoes and set aside.
  3. Return the empty pot to the stovetop over medium heat. Add cognac and cook until slightly reduced and alcohol has cooked off, about 3-5 minutes.
  4. Whisk in butter until melted.
  5. Whisk in cream and mayonnaise and cook until slightly thickened and warm, about 5 minutes.
  6. Return potatoes to the pot and add salt and pepper.
  7. Using a potato masher, mash until combined and smooth.

Tips:

  • For extra flavor, add a pinch of nutmeg or allspice to the potatoes before mashing.
  • If you don’t have cognac, you can substitute another type of brandy or even whiskey.
  • To make your mashed potatoes ahead of time, mash them as directed and then place them in a covered baking dish. Refrigerate for up to 24 hours. To reheat, simply place the baking dish in a preheated 350 degree oven and bake for 20-25 minutes, or until heated through.
